Rub Street Kitchen Carolina Style BBQ seasoning all over the 2.2Ib of pork. lf time permits, leave for 30 minutes covered in the refrigerator
Place the meat onto the BBQ and cook for 45 minutes [until browned) with the lid down. Check every 20 minutes and tum.
Cover with foil and continue cooking for a further 2 hours at300°F
Once the meat is cooked through remove from BBQ, put aside and rest forl hour wrapped in foil. Pull the meat with a fork or by hand
Sauce:
Add Street Kitchen Carolina Style BBQ Sauce to the meat

To ensure the perfect cook, use a temperature probe: once it reaches 165°F in the core of the meat, remove from the BBQ and wrap in foil. Pull it apart using a couple of forks, then sauce generously with Street Kitchen Carolina Style BBQ Sauce.

For every extra 2.2 lb pork, add an extra 45 minutes cooking. For example: for 6.6 lb pork, cook for about 4 hours and use 3 Street Kitchen kits.
